Three-day croissant
Rated 4.9 out of 5
4.9 · 3 sample reviewsPrice: $4.20
We laminate this dough over three days: a slow cold ferment, three single folds with cultured Normandy-style butter and a final overnight proof. It bakes deep amber and hollow-light inside.
Best eaten within a few hours, still a little warm. If it lasts until tomorrow, five minutes in a hot oven brings it right back.
Ingredients
Organic wheat flour, cultured butter (milk), whole milk, cane sugar, fresh yeast, sea salt, egg wash.
